Sadly not. I only played vanilla wow back then but when you get used to that level of customization every other mmorpg UI is bad (orignal wow ui is bad too without ui mods) GW2 is the only MMO, that doesn't need add-ons to make UI functional and informative. As far as class, that very likely hits the same reasoning plus it is actually counter productive to Arenanets business model which directly benefits players having multiple characters, for each they might buy the character bound upgrades. For charr, you can use a warband name or Latin. For asura, add titles like "Professor" or "Doctor". For sylvari, search the origin of those names, and find the celtic equivalent. I usually try to make a joke on the class or race (sylvari and charr are easiest!!).
The Level-80 Boost is an item awarded to players who purchase Guild Wars 2 expansions. This awarded item comes bundled with various items and a free shared inventory slot, and allows underleveled characters to preview max-level play before committing to consuming the boost. I guess it all goes back to playing Guild Wars 1 and other games where you also could not change your base class. It's just a design decision many of us are used to from countless other games. Couple that with the fact that GW2 is pretty alt friendly and for those of us who have been playing for a long time it's no big deal.

You can repeat the story on different characters. That lets you get the end-of-instance rewards again. But the main reason to do the story is following the narrative, getting achievements, accessing new zones, and unlocking masteries. Sometimes they are really neat, but with three medium armor wearers, it would be nice if at least one of them did not have to have a long jacket on.

Not to worry though, because buying the expansion comes with a free level 80 boost.
